To celebrate Chinese New Year weekend, Chef Dominique Ansel‘s Dominique Ansel Workshop is readying a collaboration with Chef Eric Sze of 886. Opening in 2018, 886 (Taiwan’s telephone country code) is a concept from Sze and Andy Chuang that honors their Taiwanese upbringing with American modernization.
The team-up is centered around a French-Style Shao Bing Pork Belly Sandwich and Peanut Mi Jiang Latte set inspired by a traditional Taiwanese breakfast.
The shao bing features Chef Dominique Ansel’s take on the traditional Taiwanese flatbread made with Les Grands Moulins des Paris flour and laminated with Beurre d’Isigny butter from France. The flaky and golden wrap is filled with slow-braised pork belly, pickled mustard greens, garlic, chili, cilantro, and peanut sugar with a kick of paprika. Served on the side is made-from-scratch peanut rice milk, served as a latte with steamed milk.
Priced at $22 USD, the French-Style Shao Bing Pork Belly Sandwich and Peanut Mi Jiang Latte set with Chef Eric Sze of 886 will be available at Dominique Ansel Workshop in New York City’s Flatiron district January 20-22, 8 a.m. EDT until sold out.
